VINEYARD

The vines lie on the southern slopes of the Alpilles massif under the AOP Les Baux-de-Provence, on deep, well-drained limestone soils with full Mediterranean exposure and regular Mistral wind influence. The estate has applied organic and biodynamic-inspired practices for two decades.

WINEMAKING

The base must undergoes limited skin maceration then cold settling and strict temperature control to halt alcoholic fermentation and guarantee 0.0% alcohol. Fine carbonation is introduced pre-bottling and no oak maturation is applied to preserve freshness and aromatic purity.

FOOD PAIRING

Warm goat cheese with cherry, strawberry carpaccio, refined cocktails/mocktails, delicate pâtés and charcuterie.
