WINEMAKING
Chanson’s approach to Villages, Premier and Grands Crus reds is characterized by minimal intervention, emphasizing the infusion of natural elements. Grapes are vinified entirely as whole clusters to achieve a deeper color and heightened structural and aromatic complexity. The fruit is hand-selected for optimal ripeness and quality, and, to preserve its fresh fruit characteristics, promptly chilled upon arrival in a proprietary tunnel that provides rapid cooling without exposure to oxygen. The process is completed with Champagne-style fractional pressing to extract only the purest juice, followed by extended aging for 17 to 19 months in barrel, with 30% new oak used in the process.
VINTAGE

After a mild winter, spring settled down with important variations of temperatures and abundant rain which engendered millerandage (small berries). Summer was warm punctuated by several heat waves and a few thunderstorms episodes which brought some water. The harvest started mid September under a bright sunshine.
TASTING NOTES

Bright ruby color. Intense aromas of ripe and black cherries on a hint of chocolate mixed with spices. Complex and well-balanced. Deep and dense texture. Concentrated with elegant tannins. Long and generous finish.

Domaine Chanson Mercurey Premier Cru is made from grapes sourced from carefully selected Premier Cru plots with East and South-East exposures, providing generosity and typicity true to the appellation. Mercurey, the highest-yielding appellation in the Côte Chalonnaise, produces nearly a quarter of its vineyards as Premier Cru. This wine has a bright ruby color with floral aromas and intense red fruit and pepper notes. It has a deep, tight texture, well-crafted structure, and a long finish with crunchy fruit notes.

Chanson is one of the major owners of Clos des Mouches with a vineyard of 4.5 hectares. Ideal location on the hill at the southern end of the vineyards of Beaune on a spur pointing toward Pommard. A plot of 2.5 hectares is planted with Pinot Noir on a limestone subsoil covered with clay.
