Each bottle of Woody Creek’s Colorado Straight Rye is crafted in custom CARL stills using locally grown rye from trusted Colorado farms, then gracefully aged a minimum of four years in new American oak. The whiskey features a uniquely refreshing palate, with a delicately spicy finish that lingers with complexity.
Fermentation
All grains are milled and mashed on site into large, stainless steel fermenters heated by steam. Fermentation lasts about 5 days
Distillation
Custom-made CARL stills: 2 x 2,000 Liter, copper, Continuous 34-foot rectification column still with 21 plates. Water sourced from springs in the Rocky Mountains
Aging
Aged a minimum of 4 years in a #3 char, first-use, American white-oak barrel.
Tasting Note
A generous cherry and raspberry note shines through initially, giving way to a delicate sage and rosemary herbaceous quality before finishing with a touch of cayenne pepper and espresso.
