Aged gracefully for 5 years in deeply charred new American oak, Woody Creek’s Cask Strength Straight Rye is made with Rocky Mountain spring water and 100% locally grown grains. This cask strength (undiluted) bottling comes directly from a single barrel that gracefully aged at the distillery.
Fermentation
All grains are milled and mashed on site into large, stainless steel fermenters heated by steam. Fermentation lasts about 5 days
Distillation
Custom-made CARL stills: 2 x 2,000 Liter, copper, Continuous 34-foot rectification column still with 21 plates. Water sourced from springs in the Rocky Mountains
Aging
Aged a minimum of 5 years in a #3 char, first-use, American white-oak barrel.
Tasting Note
A generous cherry and raspberry note shines through initially, giving way to a delicate sage and rosemary herbaceous quality before finishing with a touch of cayenne pepper and espresso. Cask Strength is ideal for whiskey aficionados who prefer to dilute a whiskey to their chosen level.
