Just days or hours after being pulled from the ground, Woody Creek’s estate managed Rio Grande potatoes are washed, peeled, mashed, and fermented in stainless steel tanks. Fermentation takes about 3 days

Citrus, Lemongrass, Juniper, Coriander, Cinnamon, Angelica, Hibiscus, Grains of Paradise, Lavender, Cranberries, Rose Hips. Steeped in a 50% abv potato base spirit for 18 hours before a second distillation
