Domaine William Fèvre Bougros is a powerful Grand Cru from the steepest slope in Chablis, with a gradient nearing 45 degrees. The domaine tends to 49% of the cru, including 2.11 hectares in the lieu-dit Côtes Bouguerots. The vineyard, planted mostly in the 1950s and ’60s, sits on shallow soils that naturally restrict yields, creating a more complex wine. The wine undergoes an extended 14- to 15-month elevage, with about half of it spending time on the lees in old French oak barrels (averaging 6 years old), adding structure and depth to this exceptional wine.

Wine Advocate - January 29, 2026 "Sourced from a site closer to the river, defined by a steep 40% gradient and cooler nights, the 2023 Chablis Grand Cru Bougros Côte Bouguerots is entirely different from the fleshy, muscular Bougros bottling. It offers aromas of lemon oil, oyster shell and white flowers. Medium- to full-bodied, it is taut and structured, with bright acidity, ample dry extract and a long finish. Stylistically, it recalls Les Preuses more than the usual Bougros archetype."

Vinous - June 30, 2024 "The 2023 Chablis Bougros Côte Bouguerots Grand Cru comes from steep slopes at the bottom of Bougros, close to the Chablis bypass. Quite taut on the nose, it conveys plenty of tension, citrus peel mixed with hints of vanilla and white chocolate. The palate is beautifully composed with a killer line of acidity, lime cordial, a touch of fish oil, quite intense on the finish that lingers long in the mouth. One of the strongest offerings from the Domaine this vintage."
Burghound - October 10, 2025 "A riper yet more elegant nose freely offers up aromas of white flowers, mineral reduction, citrus zest, iodine and sea breeze wisps. There is fine precision and verve to the tension-filled medium weight plus flavors that exude a bracing salinity on the bitter lemon-tinged, youthfully austere and markedly dry finale. This very classy effort is also potentially outstanding."

Located southwest of Chablis, Saint-Bris is the only appellation in Burgundy that allows Sauvignon Blanc. This wine grows from northeast- and northwest-facing parcels with a mix of stones, hard limestone and clay-silt. A 12-hour pre-fermentation maceration adds to this wine’s freshness, a linearity solidified by its all-stainless-steel aging.

Beauroy is a cru sensitive to late frosts. So sensitive, in fact, growers created the artificial Etang de Beine at the foot of its hill both to influence its microclimate and as a water source for aspersion. Fèvre owns 1.12 hectares in the subclimat of Les Troësmes, where the steep slopes and thin clay-limestone soils give finesse and elegance to the wine while the sunny south-southeastern exposures provide a background of richness.

On the left bank of the Serein, Fèvre owns 3.68 hectares with vines in each of the climats off this Premier Cru. The parcel in Butteaux gives minerality, Forêts – fruitiness, and Montmains – richness. The vineyard has a uniquely stony terroir that grows an accessible, fresh wine in its youth that has the power and concentration to age.

Fourchaum is situated on the opposite face of the hillside on which Grand Crus Les Preuses and Bougros sit. Fèvre’s holdings are on the eastern side of the vineyard, as close as one can get to the Grands Crus without crossing over. The soils resemble their storied neighbors and grow similarly powerful wines, perhaps with a shade more freshness.

Chablis 1er Cru
This cru takes its name from the "Mont de Lieu" as it was traditionally considered the delineation between Burgundy and Champagne. Because of its double exposure to the south and the southeast, it gets more sunshine than other Premiers Crus and develops aromas of candied fruit and hazelnuts with age.
