Ayala’s Le Blanc de Blancs is 100% Chardonnay, produced in small quantities in exceptional years only and fully expresses the superb caliber of great Chardonnay from the best crus of the Côte des Blancs. It is truly a unique vintage offering.

The 2016 vintage is sourced from two Grand Cru villages (Chouilly, Cramant) and three Premier Cru Villages (Cuis, Oger and Grauves). After six years of aging in Ayala’s cellars, remarkable minerality and low dosage (5g/l) make this an outstanding wine that can accompany a variety of flavorful dishes, or stand on its own.

Winemaking

Everything from grape reception to vinification, aging, riddling and disgorgement is done at the Ayala cellars. The Blanc des Blancs rests on the lees in the cellar for six years after disgorgement in order to develop complexity, intensity and roundness on the palate.

Tasting Note

Bright with white gold glints and a very fine bubble. Luscious with aromas of ripe lemon, citron and jasmine accompanied by subtle notes of acacia honey and Timut pepper. Lively and well-balanced start, which shows a lovely density. Flavors of passion fruit, citrus, spices and mirabelle plum tart. Long, lingering finish with a chalky minerality.

Food Pairing

Le Blanc de Blancs 2016 is a great apéritif on its own. It will also pair perfectly also pairs marvelously with Turbot with beurre blanc, turkey with endives and lime, Crottin de Chavignol goat’s cheese or an exotic fruit Pavlova.

Vintage

2016 was a year of extreme weather in the Champagne region. After a sunny fall and a mild winter, the spring was cool and extremely wet. The scorching temperatures in the summer enabled the grapes to attain a nice balance and full maturity resulting in a magnificent harvest, yielding beautifully balanced Chardonnay wines with great aging potential.
