Domaine d’Aussières A d’Aussières Rosé is a vibrant, full-bodied expression of Grenache and Syrah, grown in the estate’s cool microclimate. The top 50% of stony and sandy plots contribute to its complexity, with notes of blood orange, raspberry, and a touch of grapefruit. Pressed immediately upon arrival at the winery and fermented in temperature-controlled stainless steel tanks, the wine is matured on the lees for several weeks to enhance its richness. This IGP Pays d’Oc rosé combines a fruit-forward character with a fresh palate and beautiful aromas of wild berries.
VINEYARD
Domaine d’Aussières’ north-facing vineyards and high altitudes for the area grow wines with freshness and verve. Large portions of the property are dedicated to forest, scrubland, or protected natural areas, a program which increases the biodiversity of the vineyards. The domaine also practices polyculture, producing honey from the property and mowing the natural cover during winter with a flock of 700 sheep.
WINEMAKING
Grapes are pressed on arrival at the winery and transfered in temperature controlled stainless steel tanks. After 15 days of fermentation at 18°c, the wine is aged for 4 months in tanks to preserve the purity of the fruit.
TASTING NOTE
The nose opens with aromas of red fruits, strawberry, cherry and some white fruits. The wine has a pleasing freshness on the palate, with attractive aromas of strawberry candy and a finish on spring notes of rose and white flowers.
