Mary’s Gin is crafted from a pure potato spirit and then infused with Butterfly Pea Blossom, Rhubarb, Elderflower and Yuzu. The spirit’s enticing violet hues are derived from the Butterfly Pea Blossom and its palette boasts a refreshing floral forward essence.
Fermentation
Just days or hours after being pulled from the ground, Woody Creek’s estate managed Rio Grande potatoes are washed, peeled, mashed, and fermented in stainless steel tanks. Fermentation takes about 3 days
Distillation
Custom-made CARL stills: 2 x 2,000 Liter, copper, Continuous 34-foot rectification column still with 21 plates. Water sourced from springs in the Rocky Mountains
