Tilth’s first foray into Napa Valley Cabernet is exactly on point. Showing all of the dark fruit and floral characteristics one would expect and knit together with velvety tannin structure, this wine is emblematic of the approachable Tilth style while remaining true the vineyard source.
Winemaking
Harvested at 25.5 Brix on October 12, 2018 from Star Vineyard in Rutherford, the grapes were destemmed to an open-top fermenter where they were cold-soaked for three days before fermentation. A mixture of Punchdowns and Pumpovers were performed over the course of thirty days before the wine was pressed to ten new French Oak barrels and one neutral barrel. The wine was racked once after the first winter and aged for a total of twenty-two months in barrel before bottled finned and lightly filtered (non-sterile).
Tasting Note
Fresh Blackberries, blueberries, and currants, layered with tobacco, tea lea, and cocoa spice. Fine tannins and energized acidity lead to a lively mouthfeel with a long finish.
