The Etna Rosso is a careful selection of Nerello Mascalese (90%) and Nerello Cappuccio (10%) from Piano dei Daini, an old contrada in the town of Solicchiata. The palate expresses harmonious layers of fresh cherries, dewy earth and salted licorice, with a typically-Etna backbone of invigorating minerality.

Vineyard

The vineyard, Vigne Curve, grows at an altitude of 600 meters above sea level, where wine has been produced since 1670. The vines are trained in the Espalier system, involving multiple cordons set along the same trellis. This is sourced from the Piano dei Daini contrada on the northern side of Etna.

Winemaking

Destemming and soft crushing of the grapes; racking via gravity into steel vats for a 15 day, temperature controlled fermentation over 15 days. Daily punch-downs. After malolactic fermentation, the wine ages in 700 liter French Tonneau for 10 – 12 months, three months in steel vats and a minimum of 6 months in the bottle.
