Ammura Etna Bianco exemplifies modern-meets-traditional Etna whites, showcasing Carricante, an ancient indigenous variety once dominant in Catania. Thriving on Etna’s eastern slopes at high altitude, Carricante delivers wines of striking freshness, high acidity, and longevity, capturing the volcano’s unique terroir. Crafted in stainless steel and aged on fine lees with monthly bâtonnage, the wine balances precision and care; a definitive expression of place, history, and modern craftsmanship.

VINEYARD

The Etna Bianco vineyard spans high eastern slopes at 1,870 ft, planted with 20-year-old Carricante trained in espalier (vines tied to horizontal wires for optimal sun and airflow) with 4,200 plants per hectare. Yields reach 7,000 kg per hectare. Vines thrive in fertile, black lava-deposited soils, while the sea-facing exposure enhances ripening, producing grapes of vibrant freshness, pronounced acidity, and a true reflection of Etna’s unique terroir.

WINEMAKING

Destemmed and gently pressed, with the free-run must fermented in stainless steel at 61–64°F. After fermentation, the wine ages 12 months on fine lees in temperature-controlled stainless steel, undergoing natural malolactic fermentation. Monthly bâtonnage keeps the lees in suspension, enhancing texture and complexity. This careful, hands-on process preserves freshness and minerality while building depth, producing a vibrant, precise Etna Bianco that reflects both the grape and its volcanic terroir.

VINTAGE

2023 delivers exceptional freshness and minerality, thanks to the ideal maturation of Carricante and Catarratto grapes. On the nose, it reveals citrus notes like lemon and grapefruit, complemented by white flowers and subtle herbal nuances. The palate is crisp, with vibrant acidity and a saline finish that reflects the volcanic terroir.
