Baumard’s Savennières Trie Spéciale bottling is in many ways the apotheosis of the appellation, and is produced only in great years (’89, ’90, ’95, ’97, ’00, ’10, ’14 to date). Exceptionally ripe bunches are hand-harvested in successive passes (‘tries’) through the estate vineyard, resulting in a concentrated wine of enormous structure and intensity, requiring many years to unwind into a lanolin-textured wine with flavors of stone fruits, spices, and minerals, and great length. One of France’s greatest white wines.

Beaune Clos due Roi 1er Cru Domaine

The vineyard of “Clos du Roi” is located below “Les Marconnets” on a fold in the hill. Chanson owns around 7.5 acres (approximately 35% of the total vineyard area). 2/3 of Chanson’s vines are planted with Pinot Noir. The plot is low on the slope and known to produce elegant, stylish wines for relatively easy drinking.

"Les Marconnets" are located in the Northern hint of the Appelation Beaune 1er Cru. The name of this vineyard referred to the german tribe "Marcomans". Chanson owns 4 ha, i.e, 40% of the vineyard.

The best grapes from the finest vineyards in Langhorne Creek are recruited to create Heartland One. 60% Cabernet Sauvignon and 40% Shiraz, a long and relatively cool ripening season allowed for full development of the fruit flavors. The wines retain their natural acidity while conveying the full range of fruit flavors and deep colors.

Situated on the same terroir as the white wine of the same name, the Pinots in the Genièvrières have been planted in three different places: two on quite shallow soil cover, bringing structure to the wine; and the third on terraces that have more soil cover, giving a fruitier side to the wine. The wines from these three areas are blended into one cuvee, Les Genièvrières Rouge. This wine has the elegance and minerality to warrant being aged.

From a high elevation site in the Yorkville Highlands with coastal influence and large diurnal shifts, the Game Trail Cabernet offers an intense, fragrant, savory, and fresh style of Cabernet that speaks of site and demands to be paired with food. This area, with trails worn by mushroom hunters and wild game that travel through the woods, was a refuge for Chris Bilbro, who hunted here and searched for Chanterelles. The mushroom on the label is a tribute to this unique place and its significance.

This vineyard is situated on a slope in Cruzille that was known historically for its reds. La Myotte is quite a cold terroir where the flowering period is often difficult, and the grapes ripen late. This leads to excellent wines in warmer years. La Myotte is on the same terroir as Beaumont (planted with Gamay), but planted with Pinot Noir. It is very interesting to be able to compare the two.

Hermitage is one of France’s most spectacular and famous appellations, producing small quantities of extraordinarily intense and ageworthy red wine and tiny amounts of dry white. The entire vineyard consists of 309 acres planted on a single granite hillside on the banks of the Rhône. The Hermitage Rouge is the example of a racy wine, that manages to remain seductive.

Mounir says that Chassagne-Montrachet “La Romanée” is, to make an analogy, the most “Puligny” wine from Chassagne. It has a lot of silkiness and sweetness, and low acidity compared to other Chassagnes; it is a very clean wine, with a particular crème brûlée character that gives way to sweet fruit.

“Savitar” is a mythical dragon-like monster, and this wine is so named because of the impression Frank Mitolo and Ben Glaetzer had upon tasting one particular lot in the Willunga vineyard. They were so blown away they decided to make a Shiraz from just the small lot, and Savitar was created.
