Michoacán is a land covered in mystery where things become infinite. Here, the customs and history are encapsulated into a mezcal that delights us with each drink. Displaying hazelnuts, toasted peanuts, pine and almonds, green apples, ripe pineapple, coconut, subtle elegant smoke on the palate, warm body, constantly evolving flavors and pleasant acidity.

Maestro Mezcalero(a): The Perez Family
Varietal: Agave Alto and Agave Manso de Sahuayo (formerly known as Cenizo)
Crushing Method: Mechanical Wheel (traditional in this region)
Water: Spring water and Puntas
Fermentation: Open pine wood vats above ground
Cooking Method: Underground Oven
Distillation: 2x in Filipino (wood) still (copper saucepan with montera wood)
Resting Period: 12 months in glass prior to bottling – non chill filtered

Farming Practices

As sustainable farmers, The Perez family plants an agave for every agave they harvest. After fermentation, the bagazo is used as natural fertilizer for the agave fields. This fertilizer keeps the weeds from growing in between and around the agave fields.
