Saison Triple Cask Rum Barbados

Aged at origin primarily up to 3 years in ex-bourbon American white oak casks. The single origin casks are then sent to Tessendier for blending, followed by 24 months of finishing ageing in France, first in mature, medium grain, French oak barrels to extract slightly roasted and spicy aromas; and finally, and most subtly, the rum is finished in fine grain French oak barrels to create a delicious and harmonious finale.
Distillation
Base distillate is sugar cane molasses sourced entirely from Barbados, with the intention to showcase the typicity of this terroir in harmonious balance with the lush distillation from the molasses pot distilled rums and the subtle, airy sugarcane column distilled rums. Filtration is done by paper, not chill filtered. Jérôme rectifies the blends using pure, demineralized (no sediment) water from the Grande Champagne region.
Aging
The rums age for 3 years in previously used white American oak bourbon barrels. The aging takes place in Barbados where the environmental factors accelerate the aging and impart intense notes of banana, mango and plum. These aged rums voyage across the Atlantic to France where Jérôme uses his expertise to create a euphonious blend. This blend then finishes in mature medium grain French oak barrels in Jarnac (France) for 12 months. Medium grain, known as Limousine, allows for a faster and deeper extraction of tannins. This imparts rich ginger and allspice notes to the final spirit. The rum then spends an additional 12 months in fine grain French oak barrels. This fine grain, also known as Troncais, helps to stabilize and soften the spirit.
