A powerful, epicurean rum with a fruity and spicy alliance. Once aerated, the nose looses to yield a collection of aromas such as candied fruits, prunes, vanilla and lychee as well as spicy notes like ginger and mixed peppercorns. On the palate it appears velvety yet fresh, with a well balanced and long, graceful finish.
Distillation
Base distillate is sugar cane molasses sourced from Barbados (30%), Trinidad (65%) and Jamaica (5%). Unaged rums are selected from both traditional refinement methods, as the ultimate goal is a blend that has the richness and intensity from the distillation of molasses in pot still combined with the delicacy and lightness from sugarcane distillation in columns. Filtration is done by paper, not chill filtered. Jérôme rectifies the blends using pure, demineralized (no sediment) water from the Grande Champagne region.
Ageing
The aging takes place in each respective island to take advantage of the humidity and topography of the Caribbean Islands. The islands’ humidities impart unique oxidation to the rums, accelerating maturation and in turn allowing deep, concentrated flavors to emerge. The Original Rum is aged 8 years in ex-boutbon white American Oak barrels and then 12 months in 50 mature French oak cognac barrels on the banks of the Charente River in France.
