Distillation
Base distillate is sugar cane molasses sourced from Barbados (45%), Trinidad (35%) and Jamaica (20%). Unaged rums are selected from both traditional refinement methods, as the ultimate goal is a blend that has the richness and intensity from the distillation of molasses in pot still combined with the delicacy and lightness from sugarcane distillation in columns. Filtration is done by paper, not chill filtered. Jérôme rectifies the blends using pure, demineralized (no sediment) water from the Grande Champagne region.
Aging
The Pale starts with a selection of white rums, a combination of molasses and cane juice distillates, and a combination of column and pot distillates. It then spends 3 months in mature French oak cognac barrels on the banks of the Charente River in France.
