So you think you know Champagne Bollinger? Here are five facts that might surprise you

Tomar highlights the house’s six kilometers of cellars beneath Aÿ, where manual riddlers still work by hand, and Gaël Chaunut, the only resident cooper in Champagne, who manages roughly 4,000 barrels. She also spotlights La Côte aux Enfants, Bollinger’s rare still red made entirely from Pinot Noir on a legendary plot founder Jacques Bollinger spent years consolidating, calling it “close in style to a top-tier Burgundy.” The piece closes with Galérie 1829, the house’s private library of bottles dating to the 1830s, and a nod to Elisabeth “Lilly” Bollinger, who led the house through World War II.
