Seamless, with an ideal balance of fruit, structure and composure, the Darioush Signature Cabernet Sauvignon is the result of decades of meticulous vineyard sourcing and management in the cooler sites of Southern Napa Valley. Sourced primarily from the estate vineyards atop Mount Veeder and Coombsville, these vineyards have reached maturity and produce wines of distinct concentration, complexity and signature freshness to be expected from Darioush.
Winemaking
After hand harvest and sorting, fermentation begins with a 4 day cold soak with gentle pump-overs for optimal color and tannin extraction. Fermentation is followed by 22 months of aging in 85% new French oak barrels., racked twice per day for clarity.
Tasting Note
A textbook vintage for Cabernet Sauvignon, highlighting the varietals regal combination of richness and refinement. Focused and more high-toned, with layers of fresh Bing cherry and black currant wrapped around a core of savory earth and cocoa. The youthful fruit intensity and polished tannins of this 100% Cabernet Sauvignon are impeccably balanced, providing breadth and structure while scents of wild sage, lead pencil and star anise reveal the wines’ Mount Veeder components.
