Bubbly & Beyond: The Best Pairings for the Holidays

Leading lifestyle publication, The Coveteur, included Champagne Bollinger Special Cuvée in a holiday focused food and wine pairing story. They argue that even if we aren’t celebrating as we normally would, “the holidays and bubbly are synonymous and there is no better year to celebrate simply making it through than 2020.” Master Sommelier and VINTUS Italian Portfolio Director Craig Collins chimed in adding, “one of my go-to bottles is Bollinger Special Cuvée, not only because it is great to pour with appetizers, but also because it has enough structure to continue enjoying throughout the meal.”

Continuing, he notes that while he loves pouring Special Cuvée with “any number of dishes, from pizza and pasta to chicken and seafood, I love the idea of pairing this wine with oysters during the holidays.”

“Raw oysters offer subtle flavors and complexity that make them impossible to resist, and the depth of flavor found in Bollinger Special Cuvée matches the complexity of oysters while the champagne’s bright acid amplifies the sophisticated flavors and salinity,” says Collins. Bollinger is one of the rare Grande Marques that’s still family owned. Known for its rich, elegant and polished style of Champagne, their outstanding wines are the result of rigorous attention to detail and incredibly labor-intensive practices that few houses are willing to undertake. Underscoring its excellence, Bollinger has remained British secret agent James Bond's Champagne of choice since 1973.
